The Skip Stories feature is now live for everybody, and I’ll be interested to see the stats eventually as what the most-skipped stories are.
I expect a lot will be spin-offs and barely-Who-related media, but what are you most interested in skipping?
I only press skip on in-person stuff. It is stuff I can’t complete

Is there any way of seeing what you skipped, because I can’t remember. I think I only skipped stuff I know I really am never ever going to watch like the sock puppets

Currently only patrons can see which stories they have skipped, using “My Personal Filters”.
A bit of an oversight 
I’ll add it to profiles like all the other pages.

Does skipping also remove it from the completed counter? As in, I’m 89% complete with every Sixth Doctor story as of now, but there are some items I am not able to complete like playing certain video games or attending a now-historical in-person event. If I skip those, will they still count against my final total or will they be struck from the record totally?

Those live experience I’ll never be able to experience, at least before human invent time travel and I get into the time agency.
And the games, I guess. I’m lousy on games anyway. The only game I remember (nearly) clearing was Pokemon: Soul Silver lol
Also a lot of comics and audio spin-offs that I’m sure I’ll never get around to.
P.S. Sorry to inform @shauny that I skipped nearly all of River’s audio. Her arc never won me over. (The Husbands of River Song, though…)

I’ve skipped the live events and other limited-time stuff that isn’t available anymore.
And also stuff I tried to complete but dropped for one reason or the other, such as Transit.

If you mean on the Character Tracker (which needs a redesign, but it is still there) then yes if you skip stuff it counts as completed, see here I completed 7 of the Curator stories and skipped 3, here is what it looks like:

Skip? There’s no such word as skip!
I’ll probably not use the skip feature, but I don’t see myself as being likely to do any that involve reading it.
Oh wait. I might skip color cut downs of 60s TV serials because I don’t believe in them.

I know what you mean. I did very much not enjoy “The Daleks in Colour”. 
But still find myself looking forward more to “The War Games in Colour” than the Christmas Special for some odd reason

I do find myself going “oh right, there’s a Christmas special” more than usual this year. It’s even written by Steven Moffat, I should be excited.
