Bit of a random topic, but there’s something fun about people you wouldn’t expect to do covers of Scarborough Fair, and yet have sung that song in some capacity during their career.
For example, Little Mix sang a cover of Scarborough Fair whilst performing at the Scarborough Open Air Theatre in 2017.
Bill Bailey has sung two covers of Scarborough Fair: one in German, which he released as part of a CD album, and one in Scarborough on Friday night (in English).
Are there any other unexpected covers of Scarborough Fair people can think of?

Hadn’t actually heard most of these before, but hearing new versions of folk songs always interests me.
I think I’d heard this one before, though. A doom metal band called My Dying Bride did a cover:
An anime strikes me as an odd place to here it, but it was in one called SukaSuka:
Another metal band called Leaves’ Eyes did a cover:
And one thing about folk songs is that it’s not uncommon for them to split off into multiple songs at some point. The song “The Elfen Knight” may not be “Scarborough Fair”, but it starts going into tasks that don’t sound too dissimilar…

Surprising number of metal covers of it there. You wouldn’t think that music genre would be a place to find Scarborough Fair.

When this topic was new I knew that song from somewhere. I finally found out from where! We sing it at scouts from time to time.

My first encounter with it, at three years old (around 28:02):
Significantly less unexpected. What’s more unexpected is me getting into Saint Sarah via the dance mixes of her cover of A Whiter Shade of Pale. Three things that do not go together! (And on the B-side, an original song of hers I knew from… Samantha Fox’s cover.)
