Isn’t technically marking something as completed but not rating it the same as rating it 0/5? Except that it doesn’t affect the ratings and stats.

Not really. That usually just means you haven’t actually rated it yet, like maybe you watched it a few years ago, and don’t remember it well enough to give an exact number.
