@Tian and everyone else who’s interested! I forgot to upload the other day, but here is my recipe for pumpkin bread It’s all in grams because I adapted it from a US cups recipe but it is tried and tested. In case my handwriting is too hard to read, here it is:
Ingredients:
- 1 tin of pumpkin (425g)
- 55g oil
- 260g flour
- 2 eggs
- 200g maple syrup (or you could use sugar but you might want to reduce the flour content a little)
- 1 teaspoon baking soda, cinnamon, ginger, cloves
- 1/2 teaspoon nutmeg
- choc chips
Method:
- Preheat oven to 180C/350F. Prepare baking loaf tin
- Mix all wet ingredients (then if using sugar add it), then fold in all dry ingredients.
- Cook for 50m-1hr

I’ve had a lot more free time to cook lately! Tonight is chicken adobo with rice and shirazi salad, and then yesterday I baked matcha dark chocolate cookies.
Not sure what your salad is, but adobo is awesome.
Really classic middle eastern salad, tomato, cucumber and onion marinated in oil and vinegar.
Adobo turned out beautifully and I have a ton of the broth left. I put a marinated duck egg yolk on the rice, so I’m living large

Making foccacia for the first time and I’m very afraid of it. I think the dough can smell my fear. It will be pizza soon.
How’s it turned out?
Turned out very good! Pesto got a lil wet + didnt have enough basil, but the toppings and dough were perfect.
My favorite pizza of all time (and the one i made) is pesto, potato , red onion and burrata. It was super good for my first time baking any sort of bread from scratch
Focaccia is fun to make and so delicious!
We made one of our favourite soups yesterday, roasted tomato soup with tomatoes, garlic, red onion and bell peppers.
