(Admittedly, mostly New Series books, as I haven’t read many Classic ones yet)
Aside from tsome phenomenal Targets (Dalek, The Day of the Doctor, The Eaters of Light, The Giggle, Rogue), there have been some great Who books over the years.
I’m terms of the New Series Adventures, Only Human is quite highly regarded (although I did not like it much).
Touched By An Angel is one of the best Doctor Who books, an amazing Weeping Angel story, and the only Who book that’s made me cry.
The Blood Cell is disturbing, mysterious, engaging, and does great things with the first person narration. I cannot recommend this enough.
While aimed at kids, The Secret in Vault 13 is a very fun ride for anyone to enjoy.
The Wintertime Paradox is a wonderful anthology, luxurious and stunning.
I would definitely go for “Prisoner of the Daleks” - one of the best Dalek stories out there.
Verdigris is hilarious.
I love Scratchman! I’ve done the audiobook a couple times and it’s an utter delight.
I highly recommend The Day of the Doctor novelisation!
For more 4 Doctor Who and the Krikkitmen is great fun.
All I can suggest to you are Six novels lol, but if you’re a Tom Baker fan, I can recommend his earlier work, The Boy Who Kicked Pigs. It’s not Doctor Who, but if you’re into black humor, it might be something you’d be interested in.

Doctor Who in Wonderland is brilliant, incredibly funny, and a love letter to the Alice books.
Touched by an Angel from the NSAs is spectacular, and I cannot recommend it enough to everyone.
The Secret in Vault 13, while aimed at a young audience, is great, and it actually got me invested in 13’s fam.
In terms of Target Novels, The Giggle is really really good, taking advantage of the Toymaker’s nature.
Well if you want Book Recommendations… despite having read not many Novels there are plenty of Places. I do say pick some of your favorite Doctors or even Tardis Teams first and look what they have to offer.
Obviously I do recommend giving the EDAs a shoot, but it’s definitely more a Commitment, if you want a Taste of it, books like Alien Bodies and Crooked World are superb.
I do also recommend maybe trying out the VNAs, there are more forgiving with dip in and out.
There are also the Puffin Classic Crossovers which are much shorter, usually Doctor Who in Wonderland is a Highlight there.
And of course you also have plenty of Short Story Collections, if you want possibly something shorter the BF prose Short Trips can be quite superb at times at least.
