The War Machines and The Evil of the Daleks for Ben and Polly, and Victoria, respectively, are great Companion introduction stories.

The double episode Silence in the library / Forest of the dead if we count River as a companion.
If we don’t count River I have to say 11th hour as this episode made me a Whovian. The eating part is so funny

I’ve experienced every companion introduction now (as my badge title attests!) and my favourite is still The Marian Conspiracy. It’s a great story and simply a perfect introduction to Evelyn!

I think one of the best introduction stories might be the Inheritance, from the 11 Doctor Chronicles. Valarie is introduced really well.
I think the best introduction stories show us the companion’s home life (their normal so to speak). And this one does that really well through having the main conflict being around the disease that’s affecting her family.
Plus Valarie herself is shown to be a really good lead from the get-go with her unique traits (cyborg) also being shown.
